I just tried this out yesterday and had to share it…a veggie salad you will LOVE!
Heat oven to 400 degrees
Dice a sweet potato, and a largish beet. Keep them separate.
Open and drain a can of garbanzo beans.
Put the three ingredients in separate rows on a foil-lined baking sheet. Liberally spray olive oil over everything, liberally sprinkle garlic powder and tumeric on it all, and less liberally sprinkle salt and pepper. Bake for 20 minutes.
Cut the veins out of 3 large kale leaves, cut them up and spray and sprinkle just like the other veggies.
After 20 minutes, take the baking sheet out and scoot the veggie around to make room for a row of kale. Add the kale to the sheet and bake for another 5 minutes.
Combine everything in a bowl and drizzle olive oil over it. Such a wonderful combination of flavors. Eat it warm or cold. Maybe enjoy it over the holiday weekend, which I hope is a lovely one for you!
