Years ago a friend of mine who grew herbs for restaurants here introduced me to herb pizzas. Now, it’s one of the reasons I grow herbs every year. Tres simple. I usually bake 3-4 of these at a time on a cookie sheet.
Take a tortilla, lay down a layer of shredded mozzarella cheese, then a thickish layer of all the herbs you have (I use chives, parsley, basil, thyme, savory, and oregano), then a thin layer of shredded Parmesan cheese, pop in a 350 degree oven for 15 minutes or until the top cheese is starting to brown. Cool, slice and enjoy how marvelous herbs taste! Cherry tomatoes are a great side for these.
